A cooking time and temperature calculator estimates how long to cook meat, poultry, fish, or vegetables based on weight, cut type, cooking method, and desired doneness. Unlike ingredient quantity scaling, cooking time is not linear with weight — it scales roughly with the square root of volume, because heat must penetrate from the surface to the centre. The critical output is always the internal temperature of the food, not the elapsed time. Time estimates are starting points; a probe thermometer is the only reliable way to confirm doneness. and are useful for complementary kitchen calculations.

Undercooking meat poses serious food safety risks — the most dangerous pathogens (Salmonella in poultry, E. coli in beef, Listeria in ready-to-eat foods) are eliminated at specific internal temperatures, not at specific cooking times. Cooking time calculators should always be used alongside a calibrated instant-read thermometer, never as a substitute for temperature verification.

  1. Select the food type and cut (whole bird, joint, fillet, steak, etc.).
  2. Enter the weight in pounds or kilograms.
  3. Select the cooking method (oven roasting, grilling, frying, slow cooker, etc.).
  4. Select desired doneness for meat (rare, medium, well-done) — for poultry and pork, always cook to USDA safe temperatures.

  6. Always verify with a probe thermometer — the time estimate assumes the oven is at temperature and the meat starts at refrigerator temperature (~40°F / 4°C).

Cooking time estimation

Basic roasting guide: Time (mins) = (Weight in lbs × mins/lb) + base time

Common oven roasting times per pound at 350°F (175°C): Whole chicken 20 min/lb; Beef (medium) 15–20 min/lb; Leg of lamb (medium) 15–20 min/lb; Pork (well-done) 20–25 min/lb; Turkey 13 min/lb (unstuffed).

USDA safe internal temperatures: Chicken and turkey 165°F (74°C); Pork 145°F (63°C) + 3 min rest; Beef, lamb steaks/roasts 145°F (63°C) + 3 min rest; Ground beef/lamb 160°F (71°C); Fish 145°F (63°C).

Worked example: 4 lb whole chicken at 350°F. Time = 4 × 20 = 80 minutes. Check internal temperature reaches 165°F at the thickest part of the thigh, not touching bone.
