Cooking time estimation

Basic roasting guide: Time (mins) = (Weight in lbs × mins/lb) + base time

Common oven roasting times per pound at 350°F (175°C): Whole chicken 20 min/lb; Beef (medium) 15–20 min/lb; Leg of lamb (medium) 15–20 min/lb; Pork (well-done) 20–25 min/lb; Turkey 13 min/lb (unstuffed).

USDA safe internal temperatures: Chicken and turkey 165°F (74°C); Pork 145°F (63°C) + 3 min rest; Beef, lamb steaks/roasts 145°F (63°C) + 3 min rest; Ground beef/lamb 160°F (71°C); Fish 145°F (63°C).

Worked example: 4 lb whole chicken at 350°F. Time = 4 × 20 = 80 minutes. Check internal temperature reaches 165°F at the thickest part of the thigh, not touching bone.
