A recipe written for 4 that you need to serve to 25 requires a scaling factor of 6.25 — straightforward for flour and water, but leavening agents such as baking powder and baking soda should only be scaled by approximately 75% of the factor to avoid a bitter aftertaste or over-rising. Similarly, cooking times increase for larger volumes but not proportionally — they scale roughly with the square root of the volume ratio.

Recipe scaling formula
Scaling factor = New servings ÷ Original servings
Scaled ingredient = Original quantity × Scaling factor
Leavening adjustment = Original leavening × (Scaling factor × 0.75)
Worked example: Recipe serves 4, you need 10. Scaling factor = 10 ÷ 4 = 2.5. Flour 200g → 500g. Baking powder 8g → 8 × (2.5 × 0.75) = 15g (not 20g). Note: temperature does NOT scale — always keep the oven at the same temperature as the original recipe.

Most ingredients scale directly with the factor. Exceptions: leavening agents (baking powder, baking soda, yeast) — use 75% of the scaling factor; salt and strong spices — scale by 50–75% and adjust to taste; cooking time — increases, but not proportionally; for doubled volume, add approximately 25–35% more time and check core temperature; oven temperature — never scale; keep the same temperature as the original recipe regardless of batch size.
Food tips and best practices
- Always weigh ingredients by grams rather than cups when scaling — volume measurements become inaccurate at large scales because of compaction and meniscus variation.
- For baking, scale up by no more than 4× in a single batch — beyond this, ingredient chemistry becomes difficult to control reliably.
- When scaling down (making a smaller batch), be especially careful with leavening — use even less than the 75% rule suggests, as too much baking powder produces a metallic taste.
